2025 Havilah Pinot NoveauCrunchy, bright, and made for early drinking. Picked nice and early for that lively acid crunch, this Pinot was fermented entirely with whole berries, spending six days on skins before a gentle press. It rested five months in barrel on light lees, then was racked and bottled without any fuss. Juicy, vibrant, and full of energywill take a little chill.
